Sem nenhuma adição de gordura na massa, somente ingredientes integrais orgânicos, uma mistura de sabores que realmente vale a pena experimentar. Eu fiquei impressionada com o resultado. Nunca tinha experimentado fazer bolo ou muffin com abobrinha verde ralada , e adorei. Realmente a abobrinha faz uma grande diferença na textura da massa. Já estou aqui pensando em outras receitas que vou experimentar usando abobrinha ralada.A massa ficou leve, macia e muito deliciosa contrastando com a parte de cima que ficou com uma textura crocante. Já fiz varias vezes esta receita, e somente agora estou dividindo com vocês, porque tenho certeza do resultado. A mesma massa pode ser usada para fazer bolo. Eu já fiz e ficou uma delicia!
Rende 14 muffins
INGREDIENTES
- 3 xícaras de farinha de trigo integral
- 1 1/4 xícara de açúcar mascavo
- 1 xícara de abobrinha verde ralada
- 1 banana grande bem madura
- 2 xícaras de água em temperatura ambiente
- 1 colher de sopa de canela em pó
- 1 colher de sopa de noz moscada em pó
- 1 colher de sopa de cravo em pó
- 1 colher de chá de gengibre ralado
- 1/2 xícara de nozes picadas
- 1 pitadinha de sal
- 1 colher de sopa de fermento em pó
PREPARO
Comece ralando a abobrinha. Você vai precisar de uma xícara de abobrinha ralada. Eu usei uma abobrinha de tamanho médio, e deu bem certinho uma xícara. Use o ralo médio. Se você usar abobrinhas orgânicas, rale com a casca, caso contrario, remova as cascas e rale a polpa. Reserve.
Em um prato grande grande coloque a farinha, o açúcar mascavo e o sal. Misture bem.
Adicione a canela, a noz moscada e o cravo em pó. Misture novamente.
Coloque a agua aos poucos e continue misturando para agregar bem os ingredientes e conseguir uma mistura homogênea.
Adicione a abobrinha ralada e o gengibre. Misture novamente. Como a abobrinha libera líquidos, vai ajudar na consistência da massa.
Caso você achar necessário coloque mais um pouquinho de água. Mas muito cuidado se o fizer. A consistência desta massa deve ser firme. Depois de misturar a abobrinha, adicione as nozes picadas e misture novamente.
Esmague bem com o garfo uma banana grande bem madura. Esta banana que eu usei estava com a casca escura, bem no ponto que eu precisava.
A banana madura nesta receita serve para adoçar e também substitui os ovos fazendo com que a massa fique bem fofinha. Esmague bem com o garfo e adicione a massa. Misture novamente.
A massa está pronta. Prepare as forminhas. Se você tiver uma forma de muffins, pode forrar com papel, ou apenas untar as cavidades com óleo. Caso você não tiver a forma de muffins, pode usar forminhas de empada, ou então somente as forminhas de papel em uma assadeira retangular. Ligue o forno para pré aquecer a uma temperatura de 180C.
Depois de todos os ingredientes adicionados, você vai ter uma massa firme, e por ultimo vai acrescentar o fermento em pó. Distribua a massa nas forminhas. Se você quiser pode colocar pedacinhos de nozes na massa antes de levar ao forno. Eu pensei em fazer, mas como estava fotografando o passo a passo acabei esquecendo e não quis deixar a massa muito tempo fora do forno para não perder a receita.
Leve para assar no forno pré-aquecido por 30 minutos ou até que os muffins estejam dourados. Vejam na foto a delicia que ficou. Imagine o perfume na casa quando estes muffins estavam assando. Delicia!

WHOLE WHEAT MUFFINS WITH ZUCCHINI AND WALNUTS
I made these muffins for the first time at my kid’s house. I
wanted to bake something and all I found was zucchinis, whole wheat flour and
brown sugar. I decided to give a try and ended up with the best whole wheat
muffin I’ve ever had. There’s no fat added, I only used organic and whole
ingredients. The flavors blend beautifully; I was stunned with the outcome. I
had never thought about a zucchini cake or muffin, and this was a hit. The
zucchini plays an important role in batter; I’m already brainstorming other
recipes with it.
The batter was light, soft and delicious, with an incredible
contrast with the top crust. I made this recipe countless times, but it’s the
first time I’m sharing it with you. This same batter can be used for a cake. I baked one with it and it’s also awesome!
Yields 14 muffins
INGREDIENTS
- 3 cups whole wheat flour
- 1 ¼ cup brown sugar
- 1 cup green zucchini, grated
- 1 big banana, very ripe
- 2 cups water, room temperature
- 1 TBS cinnamon powder
- 1 TBS nutmeg powder
- TBS clove powder
- 1 tsp ginger, grated
- 1/2 cup walnuts, chopped
- 1 pinch of salt
- 1 TBS baking powder
DIRECTIONS
Grate zucchini. You’ll need one cup of it; a medium zucchini
was enough to reach this amount. Grate them medium-wide. If you’re using
organic zucchinis, grate with the peel, otherwise, peel them before and only
use the pulp. Set aside.
Add the flour, brown sugar and salt to a big dish. Mix well.
Add cinnamon, nutmeg and clove powder. Mix again.
Add water gradually and keep mixing ingredients until
smooth.
Add grated zucchini and ginger. Mix again. Since zucchini
releases water, it’s gonna help with optimal batter consistency.
If needed, add more water, but be careful. The batter
must be somehow firm. After stirring zucchinis in, add chopped walnuts and mix.
Mash a big and very ripe banana. The one I used had spots
all over, exactly how I wanted.
The ripe banana in this recipe works as a sweetener agent
and also as an egg replacement, making the batter fluffier. Mash it well with
the fork and add to the batter. Mix again.
Batter is ready. Prepare muffin pan. You can oil the muffin
slots or line them with parchment paper. If you don’t have a muffin pan, just
use any pan. Preheat oven to 365F.
After adding all ingredients, the batter will be firm. Last
thing you should add is baking powder.
Pour batter into slots. If you want you can top the muffins with more
nuts before baking them. I thought about this but then forgot while taking the
step by step pictures.
Bake in preheated oven for 30 minutes or until golden. Check
out the picture! They were great. These beauties leave a wonderful fragrance in
the room while baking. Delicious!
